This unique flagship wine from the renowned Hedges Family Estate earns a well-deserved "outstanding" from Decanter (score 91), and we think it will only further improve with time. It has an outlandish label (with every single one of the 7024 bottles individually numbered) and it's unique for the USA's West Coast. Old world in style, with a true expression of the Cabernet Sauvignon grape, complemented with a little Merlot and Petit Verdot to round it out, and with a good dose of Red Mountain terroir to bring it all to life. Collectivino is proud to be the first UK wine merchant to introduce this exceptional U.S. wine this side of the pond.
Tasting Notes
Pronounced nose of wild blackberry, dried herbs, savory herbs, quince zest, cinnamon, dried ginger, cocoa, and a touch of coffee and liquorice. Full palate, bright and nice long finish. Notes of aged leather, umami, dried rosemary, and vanilla round out the structured finish. High yet supple tannins.
Food pairing
Fatty cheese and meats like lamb and steak naturally work with Cab because fat attracts tannin. Meats are high in fatty proteins which coat your mouth with fat and the high levels of tannin in Cabernet bind with the proteins of the meat and clear your palate making your mouth ready for the next bite. Yum.
