Clean, pure, full. This mid body red is an absolute stunner. A field blend of the schistous terroir below the village of Faugeres, beneath the old Presbytere building where Catherine Roque's (the winemaker) house is. A smallholding organic and biodynamic wine - simply delightful. 

Tasting notes

A bouquet of black fruits, licorice and spices. In the mouth, this is a fresh, fruity wine with silky tannins and a peppery final. 

Food pairing

Pairs well with lamb, meats in sauce, red grilled meats or a rabbit stew.

About the winemaker

Catherine Roque has made her mark in the region when she planted the extraordinary vineyards at Clovallon, now looked after by her daughter Alex, in the dolomitic limestone north of the AoC. After she handed over the reins to Alex, she could focus on her 5 hectares in Faugeres, covering three different styles of schistous Faugeres terroir. Ferments are made in the village in old oak and eggs for the whites, and raised in oak and concrete. The resulting wines are detailed and perfect examples of this much underrated terroir.

Sustainability credentials: Great (3*)

Biodynamic and Certified Organic (Demeter) - a small vineyard with a careful approach in harmony with the landscape. Catherine relies on indigenous yeasts for the fermentations and she believes in long and slow fermentation at cool temperatures. The wines are aged in cement tanks and barrels that are not new, for up to two years. No sulphur is used during this process and only at bottling is the smallest amount added.
