This excellent USA Washington State wine comprises grapes from the increasingly popular Red Mountain AVA and Columbia AVA terroirs. Wines from this region have their own distinct character and the use of neutral aged barrels by winemaker Sarah allows the fruit to express itself beautifully. This Hedges CMS variant focuses more heavily on the Cabernet Sauvignon (95%). It's a wine that has been selected by top sommeliers and is served at a range of prestigious establishments around the world, including two-Michelin-starred restaurant The Modern at MOMA in New York. Collectivino is the first to import this wonderful wine to the UK.
Tasting Notes
Black cherry, chocolate, peppercorn, dried thyme, cassis, black tea, vanilla and a touch of cedar on the nose. It's both rich and smooth on the palate, with flavours of blackberry, chewy milk chocolate, toasted walnut, vanilla spice, cassis and leather. Excellent long length, and nicely balanced.
Food pairing
Goes great with a well-marbled ribeye steak – the chalky tannins cut through all that tender fatty goodness. Also great with rich vegetarian dishes featuring portobella mushrooms and strong cheeses.
