Fine, silky bubbles; sweet and wild. This beautiful Crémant is more Champagne than Prosecco. A blend of several parcels of Pinot noir, Cardonnay and Aligoté provide the insanely good grapes of this surprising Crémant.
Ripe and delicate with notes of green apple, pears, pastry and blossom. Great acidity.
We love this with meatier dark fish such as grilled salmon or seared tuna (sustainably sourced of course), and in particular with sushi and sashimi. For non-meat pairings, go for rich mushroom and eggplant dishes.
About the winemaker:
The Domaine Deliance 18 hectare estate was established in post-war France through the production of sparkling wines. Crémant is the perfect harmony between Chardonnay and Pinot Noir, underpinned by Aligoté. The grape collection period throughout Burgundy begins with the harvesting of Crémants - grapes earmarked for the sparkling wine are picked early to keep the sugar levels perfectly balanced to achieve the right freshness and acidity.
